An unconventional Vermentino that combines flavor and aroma

Vermentino Toscana IGT Le Gonnare is the only white wine in the range. This is complex and special wine as it has the highest polyphenolic extract in the skins and not in the must, so the fermentation and vinification techniques adopted are aimed at the best management of this characteristic. The vines are about 30 years old and this gives the wine a very pleasant savoury character, depth and great complexity

Vinification and ageing

The destemmed grapes are crushed and fer-mented in temperature-controlled concrete or steel tanks at 20 °C for 5-7 days, until alcoholic fermentation is complete. Malo-lactic fermentation does not take place. The wine then ages for 6-8 months in 16 hl ceramic amphorae, followed by a period of bottle ageing.
